Spiced Fruit Salad

This makes a superb side salad, and it’s wonderfully refreshing as dessert. You can see a picture of it in the color section of this book. As an option, you can use vanilla sugar to add a special, subtle flavor; see Chapter 2 for how to make vanilla sugar.

Yield: 6 servings

Preparation time: 30 minutes, plus 1 hour chilling time

Spice meter: Mildly spiced

1 large or 2 small grapefruits, peeled and sectioned

2 oranges, peeled and sectioned

1 medium mango or papaya, diced, or 2 peaches or nectarines, diced

1 medium pineapple pared, cored, and diced

1 Granny Smith apple, cored, and diced

1/2 pint berries, such as blueberries, blackberries, or strawberries

1 banana, sliced (optional)

2 to 4 tablespoons sugar or vanilla sugar, depending on the ripeness of the fruit

1 to 2 tablespoons fresh lime or lemon juice

1 1/2 tablespoons water

3/4-inch piece fresh ginger, grated

1/4 teaspoon ground allspice or cinnamon

1/4 teaspoon ground cardamom

2 tablespoons fresh chopped mint

Freshly ground coriander (optional)
